This rice pudding is so simple to make and no one will know it's vegan. Mix the ingredients together then bake it in the oven for an hour…done. So good.

Ingredients
  

  • 1/2 cup Arborio Rice
  • 1/4 cup Maple Syrup
  • 1 teaspoon Vanilla Extract
  • 1/2 teaspoon Cinnamon
  • 1/2 teaspoon Cardamom (or nutmeg if preferred)
  • 3 cups Plant Milk unsweetened
  • 14 ounces Coconut Milk
  • 1/2 cup Raisins (optional)

Instructions
 

  • Preheat oven to 350°F
  • Stir all ingredients together in a baking dish. (I used a Dutch oven)
  • Bake uncovered for 1 hour (pudding will be very wet). Remove and let stand for 30 minutes, stir then let stand another 30 minutes before serving.
  • If cold pudding desired, let cool to room temperature, cover then refrigerate 6 hours or overnight.

Notes

NO RULES: Use dairy-free milk of your choice like almond milk or oat milk. You can also use brown rice. Please note that these alterations will change the flavor, color and even the texture of the pudding.
GARNISH OPTION: Try dried fruits like dried cranberries, dried cherries, dried apricots or chopped nuts like pecans, almonds, walnuts, pistachios, cashews. A sprinkle of spices like ground nutmeg and cinnamon is great too. Shredded toasted coconut is another delicious option.
MAKE IT KID-FRIENDLY: Sprinkle some mini chocolate chips on top or you can even mix them into the pudding while cooking. 
PUT SOME TWIST: Add zest, such as orange, lemon or lime zest for a refreshing and citrus flavor.
EXTRACTS OPTIONS: The classic choice is vanilla but you can try caramel, almond, anise, butterscotch, coconut e.t.c.
