Mango & Quinoa Salad

  • 1 cup Quinoa cooked & cooled
  • 1/4 cup Balsamic Vinegar
  • 2 Lime zest
  • 1 Mango diced
  • 1 Red Bell Pepper diced
  • 1/3 cup Red Onion chopped
  • 1/4 cup Coconut Flakes
  • 1/4 cup Almonds sliced
  • 1/4 cup Raisins
  • 2 tablespoon Fresh Cilantro chopped


  • Combine balsamic vinegar and lime zest and set aside.
  • Combine remaining ingredients in a large bowl.
  • Pour balsamic and lime zest mixture over salad and gently toss to combine.


MAKE IT AHEAD: I actually encourage you to make this mango salad ahead of time. Not only for a less stressful dinner, but because the longer it sits, the more the flavors marry together.
*FOR MORE FLAVOR: Pair this awesome recipe with something hot and spicy!
**FOR HEARTIER MEAL: Add black beans and chickpeas to the salad.
***FRIDGE IT!: it’s sooooo tasty when it’s super cold- amazingly refreshing for these hot summer days.
****STORAGE: Since there’s no oil, you can pop it in the fridge to enjoy the rest of the week.
