It’s Pulled BBQ Jackfruit – aka the ticket to reclaiming your favorite BBQ sandwich.

The process is so simple.

Drain and clean jackfruit.
Toss with BBQ spices.
Saute.
Add BBQ sauce.
Simmer.
Voila!

Even the novice can make this sandwich. All that’s left to do is sit back and watch your friends marvel at what they’re eating. I’ll never scorn the jackfruit again, no matter now ugly and weird it is.

Mmmm winner, winner…after an exhaustive search for a good BBQ Jackfruit recipe, here it is. Tricks to getting a meat-like consistency with jackfruit include rinsing well, then squeezing the liquid out of it before cooking.

Ingredients
  

Pulled BBQ Jackfruit

  • 20 ounces Can Young Green Jackfruit
  • 1 Small White Onion chopped
  • 2 Cloves Garlic minced
  • 1/4 cup Vegetable Broth
  • 3/4 cup BBQ Sauce

Mango-Cilantro Coleslaw

  • 1,5 cups Red Cabbage shredded
  • 1.5 cups Green Cabbage shredded
  • 1 Mango diced
  • 1 cup Cilantro chopped
  • 1/2 Juice from lime
  • 2 teaspoon Apple Cider Vinegar
  • 1 tablespoon Maple Syrup

Pulled BBQ Jackfruit

  • Preheat your oven to 400°F. Lightly grease a baking pan. Drain, rinse and dry the jackfruit. Cut the jackfruit into smaller pieces by cutting it from core to the edge for the most pulled texture.
  • Add the olive oil to a skillet over medium-high heat, add the onions and garlic. Sauté until the onions are tender and beginning to brown, about 5 minutes. Add in the chopped jackfruit and vegetable broth. Cover and continue to cook another 8 to 10 minutes, until the jackfruit is soft enough that it can be mashed. Mash the jackfruit with a potato masher, until it breaks apart and looks pulled or shredded.
  • To finish the jackfruit, spread in an even layer across the baking pan, bake for 15 minutes. Remove from oven and pour over 1/2 cup BBQ sauce and stir to combine. Continue to bake for another 10 minutes. Remove, stir in the remaining BBQ sauce.
  • Serve on toasted buns.

Mango-Cilantro Coleslaw

  • In a large bowl, add cabbage, mango, cilantro,
    lime juice, vinegar, maple syrup, and salt. Stir to combine; let sit for 5
    minutes to absorb all the flavors.

Notes

DOUBLE THE RECIPE: One can of jackfruit makes about 3 sandwiches, so double the recipe and save some for another day.
PERFECT TEXTURE: After sauteing the jackfruit, it gets baked resulting in a perfect texture. 
JACKFRUIT: Just be sure it’s young green jackfruit in water, not brine or syrup. This is key to achieving proper flavor and texture.
