Italian Sausage Pasta
Another classic dish veganized for cruelty-free times. With all the new vegan products available, anything can be made vegan.
Ingredients
- 1 Onion chopped
- 1 clove Garlic minced
- 2 Vegan Italian Sausage cut in 1/4 moons
- 1 cup Chopped Tomatoes
- 2/3 cups Vegetable Broth
- 1/3 cup Vegan Cream Cheese
- 1 cup Frozen Peas
- 1 tablespoon Chopped Fresh Basil 1/4 teaspoon dried
- 1 tablespoon Chopped Fresh Oregano 1/4 teaspoon dried
- 1/2 teaspoon Salt and Pepper to taste
- 1/4 cup Vegan Parmesan
- 8 ounces Pasta of Choice
Instructions
- Cook pasta according to package directions. Set aside.
- In a large nonstick skillet over medium heat with 1 tsp olive oil, saute onion, garlic for 2 minutes.
- Add sausage and continue to saute approximately 3 to 4 more minutes. Add broth and tomato, then gradually stir in vegan cream cheese until melted.
- Add peas, basil, oregano then reduce heat to medium-low and simmer for 5 minutes. Season with salt and pepper.
- Stir in pasta, cook until heated through. Sprinkle with vegan parmesan cheese before serving.
Notes
MAKE IT GLUTEN-FREE: Use brown rice tagliatelle.
